Finishing 2016 by preparing for St. Patrick's Day

On a cold and rainy late December morning, I brewed my 12th and final batch of beer for 2016. This recipe comes from Tallgrass Brewing in Manhattan, Kan. via Northern Brewer. This sweet, milk stout, Tallgrass' Buffalo Sweat, will be a nice treat for our St. Patrick's Day celebration in March.

Recipe for Tallgrass Brewing Buffalo Sweat Stout

Sweet Stout, All-Grain

5 gallon batch

Ingredients

Grains
7.75 lbs Briess Pale Ale Malt
1 lb Roasted Barley
1 lb Vienna Malt
8 ozs Flaked oats
8 ozs Briess Victory Malt
6.08 ozs Black (Patent) Malt

Hops
1 ounce Glacier, 60 mins
0.25 ounce Williamette, 5 mins

Adjuncts:
8.00 ozs 4.30 % Lactose 60 mins 1.030

Yeasts
1 vial, White Labs 0007, Dry English Ale

Mash schedule

Infusion, add 13.91 quarts of water @ 174.3° F
Saccharification rest for 60 min @ 156° F
Add 4.4 quarts of water @ 212° F
Mash out for 10 min @ 168° F
Sparge with 16.59 quarts of water @ 170° F

Fermentation schedule

Primary fermentation for 7 days @ 68° F
Secondary fermentation for 28 days @ 72° F
Keg for 14 days @ 74° F
