Saison, All-Grain

5 gallon batch

Ingredients

Grains
4.5 lbs 2-row Belgian Pilsner
2.75 lbs Vienna Malt
12 ozs Wheat, Torrified

Hops
1 ozs East Kent Goldings, 60 mins
0.25 ozs Styrian Goldings, 10 mins
0.25 ozs Saaz, 10 mins
0.75 ozs Styrian Goldings, 2 mins
0.75 ozs Saaz, 2 mins

Yeasts
Wyeast 3711 French Saison yeast

Original recipe from Northern Brewer.

Mash schedule

Add 10 quarts water at 167.3° F
Saccharification rest for 60 minutes at 150° F
Add 5.52 quarts of water at 212° F
Mash out for 10 minutes at 170° F
Fly sparge with 17.75 qts water at 170° F

Fermentation schedule

Primary for 14 days at 71.0° F
Secondary for 7 days at 72.0° F
Keg for 14 days at 74.0° F
