Recipe for The Innkeeper

Strong English Pale Ale, All-Grain

5 gallon batch

Ingredients

Grains
6 lbs Simpsons Golden Promise
4 ozs Simpsons Extra Dark

Hops
1 ounce Fuggles, 60 mins
1 ounce East Kent Goldings, 45 mins
1 ounce Styrian Goldings, 5 mins

Adjuncts:
1 Corn Sugar (Dextrose), 60 mins

Yeasts
Wyeast 1275 Thames Valley Ale

Original recipe from Northern Brewer.

Mash schedule

Infusion with 7.81 qts at 170.8° F
Keep at 153° F for 60 mins
Add 3.67 qts water @ 212° F
Mash out for 10 mins @ 170° F
Sparge with 20.88 qts of water @ 170° F

Fermentation schedule

Primary fermentation for 14 days at 70° F
Bottle/Keg for 14 days @ 74° F
