Recipe for Witbier

witbier, All-Grain

5 gallon batch

Ingredients

Grains
3.5 lbs Weyermann Pale Wheat Malt
3.5 lbs Two-row Belgian Pilsner
1 lb FlakedOats

Hops
2 ozs Hallertauer Hersbrucker, 60 mins.

Adjuncts:
1 ounce coriander, 10 mins.<br /> 1 ounce bitter orange peel, 1 min.

Yeasts
White Labs Belgian Wit, one vial

Mash schedule

Add 10 quarts water @ 169.6° F
Saccharification rest for 60 minutes @152° F
Add 4.97 quarts water @ 212.0° F
Mash out for 10 minutes @ 170° F
Fly sparge with 18.3 quarts water @ 170° F

Fermentation schedule

Primary 14 days @ 68.5° F
Secondary 14 days @ 72° F
Keg 14 days @ 74° F
