Bohemian Pilsner, All-Grain

9.5 lbs Pilsner (2 Row) Bel
4 ozs Weyermann Carahell

Hops
1 ozs Pearle, 60 mins
1 ozs Saaz, 30 mins
1 oz Saaz, 15 mins

Yeasts
Wyeast #2278 Czech Pils with a yeast starter

Mash schedule

Infusion, add 12.19 qts water @ 168.5°F
Keep at 151.0°F for 60 mins
Mash out, add 6.40 qts water @ 212.0°F
Keep at 170.0°F for 10 mins
Fly Sparge using 15.60 qts water @ 170.0 °F

Fermentation schedule

Primary 14 days @ 53.0°F
Diacetyl rest for 2 days @ 63.0°F
Lager 42 days @ 43.0°F
Keg 14 days @ 58.0°F
