Grains
4 ozs Weyermann Acidulated
11 lbs Pilsner (2 Row) Ger

Hops
1 oz Perle, 60 mins
1 oz Hallertauer Mittelfrueh, 10 mins

Yeasts
White Labs 838, Southern German Lager Yeast

Mash schedule

Add 10.12 qts water @ 171.1° F
Protein rest 30 min @ 149° F
Add 9 qts water @ 189.5° F
Saccharification rest 30 min @ 162.0° F
Add 9.00 qts water @ 197° F
Mash out 10 min @ 168° F
Batch sparge 6.84 qts water @ 170° F

Fermentation schedule

Primary 10 days @ 50° F
Diacetyl rest for 3 days @ 60° F and hold until final gravity is reached.
Lager in secondary for 42 days @ 35° F
Keg and serve
