Hops
1 oz Tradition, 60 mins
0.5 oz Saaz, 60 mins
0.5 oz Saaz, 10 mins

Yeasts
Wyeast 3787 Trappist High Gravity

Mash schedule

Start by adding 11.25 quarts water at 163.8° F
Saccharification rest for 60 min at 147° F
Add 7.15 quarts water at 212° F
Mash out for 10 minutes at 170° F
Fly sparge with 15.4 quarts of water at 170° F

Fermentation schedule

Primary for 14 days at 71.0° F
Secondary for 14 days at 72.0° F
Bottle or keg for 14 days
