Weissbier, All-Grain

3 gallon batch

Ingredients

4.80 lbs, Pale Malt (6 Row) US
1.80 lbs, Wheat Malt, German

Hops
0.60 ozs, Northern Brewer, 60 mins
0.30 ozs, Hallertauer, 60 mins
0.30 ozs, Hallertauer, 10 mins

Yeasts
Danstar Nottingham Ale dry yeast

Mash schedule

Infusion, add 8.25 qts water @ 171.9° F
Keep at 154° F for 60 mins
Mash Out, add 3.05 qts water @ 212° F
Keep at 168° F for 10 mins
Fly Sparge using 10.74 qts water @ 170° F

Fermentation schedule

Primary, 7 days @ 68° F
Secondary, 14 days @ 72° F
Bottle/Keg, 21 days @ 74° F
