Irish Red Ale, All-Grain

5 gallon batch

Ingredients

Grains
7.50 lbs, Rahr 2-Row
12 ozs, Dingemans Caramel Pils
4 ozs, Special Roast
1.92 ozs, Biscuit Malt
1.92 ozs, Simpsons Chocolate

Hops
0.75 ozs Williamette, 60 mins
0.75 ozs U.S. Goldings, 30 mins

Yeasts
Danstar Nottingham Ale Yeast

Mash schedule

Add 10.93 qts water @ 170.8°F
Sacch' Rest, 60 min@153.0°F
Add 5.13 qts water @ 212.0°F
Mash out 10 min@170.0°F
Fly Sparge 17.60 qts water @ 170.00 °F

Fermentation schedule

Primary, 14 days @ 66.0°F
Secondary, 14 days @ 72.0°F
Keg, 14 days @ 74.0°F
