4.00 ozs, English Extra Dark Crystal
12.00 ozs, Weyermann Carafa III

Hops
0.75 ozs, Cluster, 60 mins
0.50 ozs, Cluster, 30 mins

Adjuncts:
1.00 lb, Lactose, added to beginning of boil<br /> 4 ozs, Cacao Nibs, added to secondary fermentation phase

Northwest Ale Yeast, Wyeast Labs 1332

Sacch' Rest 60 min@152.0°F
Add 6.06 qts water @ 212.0°F
Mash out 10 min@170.0°F
Sparge 15.94 qts of 170.00 °F water

Fermentation schedule

Primary, 14 days @ 70.0°F
Secondary, 14 days @ 72.0°F
Add Cacao nibs to secondary
Bottle/Keg, 14 days @ 74.0°F
