Brewing an Oktoberfest for the fall

My plans for the day were to brew beer and hopefully catch a little time in the hammock. It was a lot easier doing one batch at a time instead of two. And because I got the brewing done, I was happy.

Recipe for Oktoberfest single infusion mash

Märzen, All-Grain

5 gallon batch

Ingredients

Grains
5 lbs Pilsner (2 Row) German
5 lbs Munich Malt
1 lb German Dark Munich Malt - 20L
8 ozs Weyermann Caramunich II

Hops
1 oz German Tradition

Yeasts
White Labs Oktoberfest/Märzen Lager Yeast
Can also use Oktoberfest, Wyeast Labs 2633, with a yeast starter

Mash schedule

Start with 14.38 qts water @ 169.6° F
Sacch' Rest for 60 min @ 152° F
Add 7.15 qts water @ 212° F
Mash out for 10 min @ 170° F
Fly Sparge with 13.57 qts water @ 170 °F

Fermentation schedule

Primary for 14 days @ 53.0° F
Diacetyl rest of 2 days @ 68.0° F
Lager for 45 days @ 44.0° F
Keg for 14 days @ 74.0°F

  • Boil Size: 6.53 Gals
