Preparing for Oktoberfest when the heat index is 109.

Making a German alt on a hot, hot August day. Had to hide the kettle under the hammock while the immersion chiller did its job.

Recipe for German Alt

Altbier, All-Grain

5 gallon batch

Ingredients

Grains
4 lbs Munich Malt
2 lbs Munich Malt - 20L
3.5 lbs Pilsner (2 Row) Ger
8 ozs Weyermann Caramunich II

Hops
1 ozs Pearle, 60 mins
1 ozs Pearle, 30 mins
1 ozs Hallertauer Hersbrucker , 15 mins

Yeasts
Wyeast German Ale 1007

Mash schedule

Add 12.5 qts water @ 168.5°F
Saccharrification rest, 60 min @ 151°F
Add 6.56 qts water @ 212°F
Mash out 10 min @ 170°F
Fly sparge with 15.26 qts water @ 170 °F

Fermentation schedule

Primary 21 days, @ 64° F
Secondary 10 days @ 34°F
Bottle/Keg 7 days @ 74°F
