Recipe for Irish Draught Ale

Irish Ale, All-Grain

5 gallon batch

Ingredients

Grains
6.5 lbs Pale Malt, Maris Otter
8 ozs Simpsons Caramalt
4 ozs Simpsons Golden Naked Oats
4 ozs Simpsons Chocolate

Hops
1 oz Galena, 60 mins

Adjuncts:
1 lb. honey, added at start of boil

Yeasts
Wyeast 1084 Irish Ale

Mash schedule

Mash in with 9.38 qts water @ 171.9° F
Sacchariffication rest 60 mins @154.0° F
Add 4.14 qts water @ 212.0° F
Mash out for 10 mins @ 170.0° F
Sparge with 19.5 qts water @ 170.0° F

Fermentation schedule

Primary for 14 days @ 67.0° F
Secondary for 14 days @ 72.0° F
Keg for 14 days @ 74.0° F
